🍝 Homemade Pasta Noodles 🍝

Part 2 of the epic 4 course italian meal. These were made mostly by hand. I used a stand mixer with a hook attachment to knead the dough most of the way and finished it off kneading with my hands. If you have a pasta roller, for real just use that, but it is definitely possible to make noodles without any equipment besides a bowl and a rolling pin

RECIPE (about 4 to 6 servings)
– Get yourself 2.5 cups white flour and put it in the bowl of a stand mixer fitted with a hook attachment and get it going over low speed
– Add in 5 large eggs in one at a time
– Increase the speed to medium and knead until flour and egg are completely incorporated (dough should be mixed but not a hard knot)
– Wrap in plastic wrap and let sit for 15 minutes
– Tear off a ball of dough about half the size of your fist
– Roll as thin as you can with a rolling pin (I managed to get to 1/16″ thick) on a well floured surface, so the dough doesn’t stick, and cut into strips with a knife or pizza cutter
– Let dry for 30 minutes on a rack before boiling for 7 to 10 minutes (until desired texture is reached)
– Toss in sauce (using my recipe for sauce obviously) and top with fresh basil and parm
