It’s been a few weeks since my last post, mostly because moving and travelling for the holidays takes a lot of time (who woulda thought 🤷🏾‍♂️). I had the pleasure of trying a store bought salmon dip I really liked, and wanted to make myself with my own flair.

This recipe uses cooked canned salmon, which I find is generally more accessible and easier than cooking salmon yourself. That being said, feel free to replace the canned salmon with smoked salmon, or salmon you cook yourself.

RECIPE (~1.5 cups o’ dip)
– Drain and rinse one 6oz can of salmon, to remove that tinny taste
– Add to a bowl with 8oz room temp cream cheese and 1/4 cup sour cream
– Add in 2 tsp liquid from a jar of capers and 2 tsp lemon juice
– Add in 2 tsp hot sauce of choice (I used cholulahotsauce chipotle
– Mash together until salmon has been broken up and mixture is well incorporated. If you want it extra smooth like I did, run the mixture through a food processor
– Sprinkle on 1/4 tsp dill weed and serve with some newyorksnacks Everything Bagel Crisps

Korean Beef Tacos (ft paper plate)

I had the pleasure of cooking a meal for a few very good friends last week. I would say this is a great go to for cooking for groups (under 10 people tho). You can sub the beef for the ground meat or meat substitute of your choice, or even use rice instead of a tortilla for a bowl!

RECIPE (Feeds 3 to 5)
– Brown 2.5 lbs 90/10 ground beef in a large pan with 1 tsp salt and 1 tbsp sesame oil and set aside
– In that same pan, add 1/2 cup soy sauce, 1 tsp ground ginger, 4 cloves minced garlic, 1 tsp crushed red pepper, and 1/4 cup dark brown sugar
– Whisk the mixture while cooking over medium heat, until it begins to simmer and thicken
– Add the beef back into the pan and toss to coat in sauce
– Serve on tortillas or rice with kimchi, pickled vegetables, sriracha mayo, green onion, and sesame seeds and enjoy!

Another super simple wing recipe for the books, and puts some wild chain wing places to shame. WARNING: This one is messy so keep napkins on hand for chowing down 🐔. I actually mixed the leftover sauce I had with a bit of bbq and that was DANK
.
RECIPE:
– Pat 12 wings down with a paper towel to dry them, coat wings with 2 tbsp flour
– Over medium-high heat, sear wings for about 30 seconds, flip and repeat, there should be a solid crust formed
– Bake at 400°F for 22 minutes
– While wings are baking, mix together 3 tbsp soy sauce, 2 tbsp honey, 1 tbsp rice vinegar, 1 tbsp sriracha, 1 tsp ginger powder, 1/2 tsp garlic powder, 1/2 tsp chili flakes
– Cook mixture over medium-low heat until thickened (about 5-7 minutes)
– Toss wings in sauce, and garnish with sesame seeds, green onions, or more sauce and enjoy!

Buffalo Chicken Mac n Cheese (ft eatbanza pasta)

Funny story, the other day I was really hungry but had no idea what to make but then a little birdie said “make mac n cheese” so here we are. I used a mix of random cheeses I had in the fridge so feel free to use the cheese of your choice.

RECIPE
– Cook 4 servings of eatbanza (or pasta of choice) according to package directions, rinse with cold water to stop the cooking process and set aside
– Cube and cook 1lb chicken breast in a pan over medium heat, set aside as well
– In the same pan you cooked the chicken in, melt 3 tbsp butter over medium low heat
– Once butter is melted, whisk in 2 tbsp flour until completely integrated (no clumps)
– Slowly pour in 1 cup of milk while constantly whisking (we don’t want the flour/butter mix to seize up and clump hard
– Once milk is integrated and mixture is smooth, slowly add in 1.5 to 2 cups of cheese of choice (I used irish cheddar, shark cheddar, parmesan, and manchego cheeses)
– Continue whisking until cheeses are melted and incorporated. Add in 2 tsp garlic powder, 1/2 tsp salt, 2 tbsp franksredhot sauce and whisk until combined
– Mix in chicken and pasta to the cheese sauce, cook over low until meat has warmed up and serve!

Sometimes you’re in the mood for cake with zero patience to make a whole one. By adding in fruit it makes it healthier (though food that contributes to mental health is just as important honestly)
.
RECIPE
– 1 egg, beaten
– 4 tbsp flour
– 3 tbsp oil
– 1/4 tsp baking powder
– 2 tbsp sugar (or sugar substitute)
– 1/4 cup blueberries
– Mix all ingredients, except blueberries until thoroughly combined in a medium sized mug
– Fold in blueberries
– Microwave for 30 seconds, take out and give a quick stir, then pop back in the microwave for 30 more seconds. Cook times may vary by 5 seconds depending on your microwave
– Enjoy!

Ok so here’s the big problem I have with store bought guac: lack of texture (feels like paste sometimes), weird preservatives, and lack of flavor (don’t get me wrong I love some straight avocado on toast like the classic millennial I am but come on give me some FLAVOR). Also hot tip, when you’re trying to take the avocado pit out, hold the avocado in a towel in your hand so if you miss you don’t lose a finger

RECIPE (~1.5 cups guac)
– Mash 3 whole avocados in a bowl
– Add in 1/2 tsp garlic powder (or 1 clove fresh, mashed garlic)
– Add 1/2 tsp salt
– Add 1/2 tsp cumin
– Add 3 tbsp lime juice (helps prevent browning and really brightens up the guac with the A C I D
– Finely chop 1/2 medium red onion (about a 1/4 cup), one small roma tomato (scoop out tomato guts/seeds) and one jalapeño for 🔥🔥

Thai Peanut Chicken Curry

There’s nothing I like more than 1 pot meals, especially now as I pack up my apartment for a move, and I don’t want to make too much mess
.
RECIPE (6 to 8 servings)
– Grab a medium sized pot and heat 2 tbsp oil over medium heat
– Cube 2lbs chicken breast into 1″ chunks and saute in pot until cooked (roughly 5 to 6 minutes), set chicken aside in a separate bowl but keep pot hot
– Thinly slice 1/2 white onion and 1 red bell pepper
– Thinly slice one large carrot (I used a potato peeler for simplicity
– Wash and roughly chop 3 cups bok choy
– Add 2 tbsp oil to the pot, and saute 2 tbsp red chili paste and 4 cloves minced garlic for about 1 minute
– Add sliced pepper and onion and cook until softened
– Add in 2 tbsp (add more for heat) of chili sauce (sambal oelek, sriracha,etc) as well as 1 tsp salt
– Add 4 tbsp peanut butter, 1.5 tsp fish sauce (or soy sauce), 1.5 tbsp lime juice, and 1.5 tbsp brown sugar or maple syrup
– Add in two 12oz cans of coconut milk and 1.5 cups water
– Add in carrots, bok choy, and cooked chicken.
– Bring to a boil, reduce to a simmer, and cook for 20 minutes covered with the lid cracked, stirring halfway
– Serve hot over rice with fresh peanuts and enjoy!

🍅 Roasted Tomato Basil Soup 🍅 (ft Grilled Cheeze)

Man it’s gonna be 80° in Texas today but I still want soup. Gotta at least pretend it’s winter ya know?
.
RECIPE (~3 Cups Soup)
– Wash 1lb of tomatoes (I used campari, but any other FRESH tomato will work)
– Slice in half, place facedown on a sheet pan, and brush tomatoes with 1 tbsp olive oil, and sprinkle 1 tsp salt over it
– Bake at 400°F for 30 minutes, skins on the tomato should start to peel, and there should be a light char on the tomato (not burnt). Take out and let cool for a few minutes
– While tomato is cooling, melt 1 tbsp butter in a sauce pot, add 3 cloves minced garlic and saute until garlic is golden brown
– Add tomatoes and all juices from the sheet pan into the pot, as well as 1 cup vegetable or chicken broth, and 3 to 4 fresh basil leafs
– Bring to a boil, reduce to a simmer, and let cook for 10 minutes.
– Run the contents of the pot through a blender, if the soup is too liquid for your liking, return to pot and simmer for 5 to 10 more minutes, or until soup has thickened
– Serve with fresh basil and pepper, maybe some chili flakes if you’re up to it, with a roasty toasty grilled cheese and enjoy!

I’ve been making this sauce for years, but always change it here and there to adjust sweetness, heat, acid, etc. This obviously goes great on wings but also makes a nice topping for eggs, rice, etc
.
RECIPE (~3/4 cup sauce)
– In a small sauce pot, mix together the ing
– 12 oz mango juice
– 2 to 6 tbsp sietefoods habanero hot sauce (I used 3 and that was mostly mango with a nice hit of heat)
– 1 tbsp lime juice
– 1 tsp apple cider vinegar
– 2 tbsp honey
– Bring mixture to a boil, reduce to a simmer, and cook until thickened (about 10 minutes, make sure to stir it so the sauce doesn’t burn)
– For the wings, the recipe on my buffalo wings post, BUT add in 1/2 tsp chili powder to the flour mix before coating the wingies
