One Minute High Protein Chocolate Mug Cake (Keto friendly)

This mug cake is made in the microwave in under 60 seconds (yes you heard that right). I used dymatize casein protein for this recipe

RECIPE (1 Mug)
– In a mug of choice, beat one large egg and add the ing
– 15g (1/2 scoop) casein protein powder
– 2 tsp dark cocoa powder
– Add 1 tbsp almond flour
– 2 tbsp allulose (or other zero calorie liquid sweetener)
– 1 tbsp almond milk
– 1 tbsp oil of choice (I used melted coconut oil)
– Stir until thoroughly combined
– Microwave for 15 seconds, three times (45s total). making sure to give the cake a good stir before continuing
– Serve warm, and add a little whipped cream if you feel so inclined (unless you’re keto then don’t do that lol)

All Natural Vanilla Cinnamon Peanut Butter (from scratch of course)

Listen up folks, peanut butter is easy as heck to make, and you can flavor it however you like! I did vanilla cinnamon but the possibilities are endless
.
RECIPE (1 cup of PB)
– Toast 1.5 cups of dry roasted peanuts at 350°F for 5 minutes, OR warm up the peanuts in a pan over medium-low heat for 5 minutes, making sure to keep the peanuts moving to avoid burning
– In a food processor, add warm peanuts, 1 tbsp peanut oil, 1 to 2 tbsp honey (depending how sweet you want it, I used 2 for my sweet tooth tbh), 1/4 tsp cinnamon, 1 tsp vanilla extract
– Pulse until smooth, the mixture will look a bit crumbly at first but KEEP GOING. As you pulse and scrape the peanut butter you’ll notice it getting smoother and smoother
– Put in an airtight container and refrigerate for up to 4 to 6 months (though I doubt it will last that long)

I played around with my cooking method. My last one left them crispy but a bit dry. This one is much simpler AND ended up with juicier wings
.
RECIPE (12 wings)
– Get 12 raw chicken wing pieces, pat dry with paper towel
– Preheat your oven to 400°F (use convection bake if you have the option)
– While the oven is preheating, heat a pan over medium high heat with 2 tbsp oil
– Get a comically oversized bowl and toss the dry wings in 2 tbsp flour, 1 tsp salt, 2 tsp garlic powder, 2 tsp onion powder, and 1 tsp paprika
– Sear the wings in the hot pan until a crust forms (roughly 1 minute per side)
– Place the wings on a rack on a baking sheet, and bake the wings for 23 minutes.
– Once done, let cool for 5 minutes, and toss the wings in a sauce of 1/2 cup cayenne pepper sauce (franksredhot), 2 tbsp melted butter (kerrygoldusa), 1/2 tsp garlic powder and 1/2 tsp onion powder

This recipe is super simple, and the best part is that we get to use the drippings from the pork to make the sauce so it’s SUPAH flavorful
.
RECIPE (4 servings):
– Cube up 1 lb of boneless pork loin and place in a ziploc bag (or sealable container)
– Add in 1/4 cup olive oil, 1/4 cup balsamic vinegar, 2 tsp salt, 2 tbsp italian seasoning (or 1 tsp each dry oregano, thyme, and rosemary), 2 cloves minced garlic and 1/2 to 1 tsp dry chili flakes
– Let marinate for a minimum of 3 hours, up to 24 hours
– Heat up a large pan with 2 tbsp olive oil over medium heat, add diced/marinated pork and cook for 5 to 7 minutes (test a piece of pork if you’re unsure, it should be white throughout)
– Move pork to a separate bowl, keep heat on the pan
– Boil a pot of water and cook 8oz (4 servings) dry pasta based on box instructions. I used eatbanza for the extra protein punch
– While pasta is cooking, add 1/2 cup cream (or milk) to the pan, once simmering, sprinkle in 2 tbsp white flour and whisk until combined.
– Add 2 cups chicken broth to pan (add salt to taste, up to 2 tsp), bring to a simmer, and whisk until thickened. Add in 1 cup roasted red pepper, or 2 diced roma tomatoes if you are so inclined
– Add two tbsp pasta water to sauce, then add in drained pasta/pork. Stir to combine and serve hot with some shredded parmesan on top!

This jerk chicken is so dang addicting. I swear I went through the entire bottle I made in less than a week. Now you can too!

RECIPE (Dry Rub)
– 1 tbsp garlic powder
– 1 tbsp onion powder
– 1 tsp cayenne pepper
– 1 tsp chili flakes
– 1 tbsp paprika
– 1 tsp ground allspice
– 1/2 tsp each cinnamon, nutmeg, cumin, black pepper
– 2 tbsp light brown sugar
– 2 tsp dry parsley
– 1 tsp dry thyme
– 2 tsp salt
– Mix these spices together, and coat flattened chicken breasts thoroughly on both sides. Let marinate for AT LEAST 2 hours, up to 24 hours
– Cook chicken for 3 minutes per side (or until juices run clear) in a pan over medium heat with 2 tbsp olive oil
– Let rest for 10 minutes, slice, and serve on warm tortillas with beans, rice, and some of that FRESH pineapple salsa

Want to flex on your friends? Throw your food in a pineapple bowl! Salsa? Pineapple bowl. Ice cream? Pineapple bowl. Chicken nuggets? Screw it. Pineapple bowl.

RECIPE:
🔪 Cut your fresh pineapple in half lengthwise. Place skin side down and carefully use a knife to cut around the inside edge of the pineapple skin. Make two cuts around the core of the pineapple, then use a spoon to scoop the core out. Make cuts into the rest of the pineapple to loosen, and remove it
🍍 Dice the pineapple into small 1/4″ chunks and place in a separate bowl (should make roughly 2 cups)
🍅 Wash and dice two large roma tomatos (roughly 1.5 cups chopped tomato)
🧅 Dice 1/2 large red onion
🥣 Mix the tomato, onion, and 1.5 cups pineapple in the bowl with 1/4 cup lime juice, add 1/4 tsp salt, 1/4 tsp black pepper, and 1/8 tsp cumin
🌶️ Add in some freshly diced jalapeno for some extra kick
🌿 Roughly chop 1/4 cup cilantro and add in to the mix
🍽️ Serve immediately, or let sit overnight to realllllly let those flavors get to know each other before serving with tacos, eggs, with chips, or on a spoon

RECIPE (4 servings of chicken+ curry)
– Take two 8oz chicken breasts, place between two pieces of plastic wrap or in a ziploc bag and flatten to 1/4 inch using a meat hammer, or something sturdy and heavy
– In a small bowl, mix together 1/2 cup all purpose flour, 1 tbsp salt, 1 tsp chili powder
– Coat each flattened chicken breast with flour (no dry spots allowed!)
– Add two tbsp oil to pan (toasted sesame oil is my favorite) and heat over medium heat, cook chicken for 4 to 5 minutes per side or until juices run clear, set aside when done
– In the hot pan with 1 tsp more oil, add 4 diced shallots, 3 cloves minced garlic, 1 tbsp minced ginger and 1/2 tsp salt, saute until shallots have softened, about 3 minutes
– Add in 1 x 12oz can of coconut milk + 2 tbsp water
– Whisk in 1.5 to 2 tbsp green curry paste (found in ethnic aisle of grocery store) into the mix. Simmer until reduced and sauzyyy
– Serve with rice and enjoy!

RECIPE:
– Acquire 2 cups of garbanzo beans/chickpeas (if using canned, make sure to thoroughly rinse the beans to get the tin flavor outta there)
– Place chickpeas in a blender with 1/4 cup + 2 tbsp maple syrup or other liquid sweetener and 1/4 cup smooth peanut butter
– Add 1.5tsp vanilla, 1/4 tsp salt, 2 tsp cinnamon, 1/2 tsp cardamom, 1/4 tsp dry cloves, 1/4 tsp ginger powder and a pinch of finely ground black pepper (trust me on that one)
– Blend until smooth, and add in a splash of milk or non dairy substitute in case it’s too thick
– Serve with pretzel chips, apples, or crackers and enjoy!

Bacon: some love it, some hate it, and for some reason everyone was obsessed with it in 2010 (looking at you epicmealtime )

BACON COOKING TIPS:

🥓 If cooking bacon in a pan, let the pan warm up over medium heat, add bacon and let cook slowly (patience is a virtue). This helps avoid burnt/overcooked bacon and let’s the fat render out

🥓You can make bacon in the oven (really helpful for large batches where you need evenly cooked bacon). Lay bacon strips out on a wire rack over a drip tray, and bake at 400°F for 20 minutes (add an extra 1 to 3 minutes if you like it extra crispy)

🥓 Don’t chew the fat, save it! There seems to be a taboo against bacon fat (cholesterol, unhealthy, etc). Everything in moderation. Bacon brings salt, fat and flavor to a dish, so don’t be afraid to save the rendered fat in a glass jar (pour into jar carefully) and use for sauteed vegetables, steak, and more!
