Recipe:
– Preheat your oven to 350°F
-Brown 1 lb of ground turkey/beef or cook and shred 1 lb chicken breast
-Dice 1/2 a large red onion
– Grab a sauce pot, add 1 tbsp oil over medium heat and add 2 cloves garlic
– Add 1/2 cup tomato paste and brown lightly in the pot
– Add 1 tbsp chili powder (add in 2 dried Chipotle peppers for extra zing) as well as 1tsp salt, 1 tsp black pepper, 1 tsp cumin, and 1/2 tsp oregano
– Add in 2 cups broth or water (add more if the sauce is too thick. Bring to a boil, then reduce to a simmer for 15 minutes
– Lightly oil a baking dish, and spread a little of the sauce on the bottom

Layering method once sauce/fillings are prepped:
– Dip corn tortillas in sauce to coat, put down a tortilla layer
– add fillings (onion/beans/corn/meat of your choice), add a thin layer of sauce and top with cheese
– REPEAT this process until the dish is filled. The final layer should just be tortillas topped with cheese (not like that’s a bad thing)

Cover dish with foil and bake for 30 minutes. Take off foil and bake for 10 more minutes or until cheese is browned and bubbly 🧀

1. Preheat your oven to 400 toasty °F
2. Get 3 tilapia fillets, pat dry. Put in baking dish and rub with ~3 tsp oil
3. In a small bowl, mix together 1 tsp each:
-garlic powder, oregano, black pepper, chili powder, salt
2 tsp: cumin
1/2 tsp: cayenne pepper
4. Rub a dub dub that spice mix all over those tilapia and bake fish for 12 to 14 minutes
5. Serve on tortillas of choice (I prefer warm corn tortillas) and top with shredded cabbage, pickled red onions, salsa, sour cream, and cheese

2. In a small sauce pot, melt 4 tbsp butter, add 1 tbsp each lemon juice and white wine (then finish the bottle 🤷🏾‍♂️) and add the garlic
3. Bring your oven to 400°F, lightly oil a baking dish, put 4 tilapia fillets in, and brush with the melted butter mixture (reserve 2 Tbsp), add salt/pepper to taste, and top with breadcrumbs.
5. Bake for 12 to 14 minutes
4. Saute some green beans over med-high heat, add salt/pepper, and the leftover butter mixture

2. In a small saucepot:
– heat 2 Tbsp olive oil over medium heat
– add 3 cloves of garlic and lightly brown
– add 1 cup tomato paste and continue to brown (do not let burn)
– add 1 tbsp each of oregano, basil, and onion powder, 2 tsp black pepper
– add 2 cups water or chicken broth, and salt to taste
– add 1/2 Tbsp chili flakes if you’re feeling 🔥
