Is it basic? Probably. Do I care? Not at all. You know what? It’s MF FALL. This is a breakfast or dessert. If you really want to elevate it, pour a bit of fresh cream over it. You can easily double this recipe and pour it in a baking dish and prepare for a family or for the week.

RECIPE:
– In a bowl, beat one large egg
– Add in 1/4 cup milk and 1/4 cup maple syrup (or zero calorie sweetener) and whisk together
– Whisk in 3 tbsp pumpkin puree (not pumpkin pie mix, which has sugar and other additives)
– Add in 1/2 tsp each cinnamon, nutmeg, and cardamom (or 1.5 tsp pumpkin spice blend)
– Whisk in 1/2 tsp baking powder
– Add in 3/4 cup oats and mix until thoroughly combined (no dry spots)
– Pour into a ramekin, baking dish, or spoon into muffin tins and bake at 350°F for 35 minutes
– Let cool (if you have restraint) and enjoy!
