Roasted Tomato Salsa

All you need for this is a broiler and veggies. Honestly you can make any variations you want on this. Feel free to add more jalapeno or different peppers, maybe some extra spices. Up to you!

RECIPE
– 2 to 3 cups of cherry tomatoes
– 1 whole clove of garlic
– 1 jalapeno sliced in half (long way)
– 1/4 red onion (do not dice)
– Place all of these on a baking sheet, place under your oven’s broiler for 5 minutes on high (checking every minute after to make sure they don’t burn). Once the vegetables have a light char/are blistering, take them out and let them cool
– Place ingredients in a blender with 1/2 tsp salt, cilantro (if you like) and 2 tbsp lime juice and pulse to desired chunkiness
