Savory Breakfast Oat Bowl

If you do a quick Google search of “Breakfast Oat Bowl” you tend to find a lot of sweeter options. Not to say that oats and fruit are bad, but I love having something savory and filling to jumpstart my day

RECIPE (high protein!)
– Soak 3/4 cup old fashioned oats with 3/4 cup water overnight (you can also cook the oats in the morning but honestly it just saves time)
– Finely dice 1/2 red bell pepper
– Cook 1 to 2 strips of bacon in a hot skillet to desired crispiness, move to paper towel when done. Reserve 1 tbsp fat.
– Saute 1/2 cup sliced white mushrooms and the bell pepper with 1/4 tsp each salt, black pepper, paprika, and garlic powder
– Add soaked oats to pan to warm then up (or use microwave but I prefer the pan)
– Place oats in bowl along with sauteed vegetables
– Fry one egg to desired doneness and top the oats with it. Chop bacon and green onions and top the bowl to serve
