A middle eastern dish of eggs poached in a spicy tomato sauce. Awesome for breakfast with a piece of toast and LOADED with nutritious ingredients. You can use your own tomato sauce, or you can use the sauce recipe I posted last week.

RECIPE
– Dice 1/2 red or white onion as well as 1 medium bell pepper
– In a small pan (lid required), add in 2 tbsp olive oil and sauteed onion/pepper over medium heat
– Add 1.5 cups of tomato sauce, 1 tsp cumin, 1 tsp paprika, 1/2 tsp salt, 1/2 tsp chili powder
– If desired, add 1 cup petite diced tomatoes
– Continue to cook and stir over medium heat until sauce thickens up. You should be able to use your spoon to make a small indentation in the sauce
– Make 4 saucy indentations, crack an egg into each one, lower heat to medium-low, and cover pan
– Cook to desired firmness of egg (3 minutes for runny, 5 minutes for firm)
